Recipe of the Week| Salad!

My Fave Salad Combo





The weather has been fabulous these past few days. Averaging 70-80 degrees F. And with the warm weather come my cravings for a refreshing salad. This combo is my favorite. I always make sure I have a hearty and balanced mix of healthy fats, protein, and carb in my salads, cause let's be honest here- nobody likes feeling hungry just minutes after finishing their meal. I always try to make my dressing from scratch; this time I used olive oil, balsamic vinegar, and seasonings. I piled these ingredients up into a huge bowl and savored every last bite. It was super easy. And I was fully satisfied afterward. I've noticed that when I allow myself a healthy amount of fat in my meals, I feel more satisfied and less likely to run back to the fridge/pantry for snacks after eating. This is also the case when I make an intentional effort to be creative with the flavor. So enjoy your healthy fats! I know I am.

Healthy Fats (support good cholesterol and will keep you fuller longer)
  • Olive Oil (monounsaturated fat), 
  • Walnuts (omega-6 fatty acids)

Protein (will keep you full too): 
  • Chicken Thigh (I like the thigh because it is flavorful. I'm okay with the little extra fat it has vs the breast. It will keep me fuller longer. And I'm only having 1). 
  • Walnuts

Carbs (will give you energy):
  • Greens (the darker the better for Vit A)
  • Dried Cranberries
  • Cherry Tomatoes
  • I like to have a slice of bread on the side (sprouted is the best)

Extras (for flavor- because food is meant to have flavor and be enjoyed!):
  • Feta Cheese
  • Seasonings
  • Balsamic Vinegar (full of antioxidants)

  1. UMM, this looks delicious! I haven't been cooking, like at all, and I feel like I need to work out why that is the case.

    1. Cooking is a struggle for me too! So, I've upped the effort juusst a lil bit, haha. Salads seem to be a good "happy-medium" for me right now- not too much effort required :)
