Recipe of the Week| Chicken Waldorf Salad with Fresh Basil and Greek Yogurt

 Chicken Waldorf Salad with Fresh Basil and Greek Yogurt



Ingredients:
4 cooked and seasoned chicken thighs
2 cups of halved grapes of your choice
1 medium-sized chopped apple of your choice
2 cups greek yogurt
1/4 cup organic mayonnaise
1/2 cup finely chopped red onions
1/4 cup finely chopped fresh basil 
3/4 cup slivered almonds
salt and pepper to taste 
dijon whole grain mustard (optional)

Prep:
Cook or bake chicken to desired state and chop into bite-sized pieces. Let cool. In a separate bowl, combine fruit, onions, greek yogurt, mayonnaise, fresh basil, almonds, salt, and pepper. Once chicken has cooled, add and fold into bowl with greek yogurt mixture. 


Place over your favorite bread or a bed of greens and top with your favorite mustard (I used dijon whole grain mustard) for an additional kick!
