Recipe of the Week- Cauliflower Crust Pizza!

 Cauliflower Crust  BBQ Chicken Pizza









Ingredients
1 head cauliflower
2 tablespoons olive oil
Salt and pepper
½ cup cornmeal
2 eggs
2 teaspoons Italian seasoning (or your favorite combination of spices and seasonings)
½ cup barbeque sauce
1 cup cooked shredded chicken (I used the pre-shredded BBQ chicken from Trader Joes- DELICIOUS and EASY!)
¾ cup shredded mozzarella cheese
Thinly sliced red onions
Fresh cilantro

Preparation:
Preheat oven to 450 degrees. Chop cauliflower into small pieces. Heat cauliflower until soft and slightly golden in large skillet with olive oil. Make sure to check the cauliflower every few minutes to prevent burning. This process will take about 8-10 minutes. Once cauliflower is shiny, golden and soft, transfer to a blender and add eggs, cornmeal, and seasonings of choice. Puree until smooth. Pour batter onto pizza stone and spread into desired shape. Place shaped batter into preheated oven set to 450 degrees. Bake for about 20 mins. Prepare onions, and bbq chicken while waiting. Once the crust is cooked to a golden brown, top with bbq chicken and half the amount of cheese. Place in oven and add the remainder cheese and fresh cilantro towards the end of cooking. Once finished and cheese is golden brown, let cool and enjoy!
