Recipe of the Week| Cauliflower Crust Pizza Revisited

Prosciutto and Mushroom Pizza with Cauliflower Crust


1 cup of cauliflower provides 77% of our daily needs for Vitamin C!






Ingredients:
1 head cauliflower
2 tablespoons olive oil
Salt and pepper
½ cup cornmeal
2 eggs
2 teaspoons Italian seasoning (or your favorite combination of spices and seasonings)
5 slices of prosciutto torn into smaller pieces
¾ cup shredded mozzarella cheese
1 cup of lightly sautéed or steamed mushrooms
2/4 cup pizza sauce (I love Trader Joe's pizza sauce! It is full of flavor)
Optional: 2 tablespoons fresh parmesan and 1/2 cup bruschetta sauce

Preparation:
Preheat oven to 450 degrees. Chop cauliflower into small pieces. Heat cauliflower until soft and slightly golden in large skillet with olive oil. Make sure to check the cauliflower every few minutes to prevent burning. This process will take about 8-10 minutes. Once cauliflower is shiny, golden and soft, transfer to a blender and add eggs, cornmeal, and seasonings of choice. Puree until smooth. Pour batter onto pizza stone and spread into desired shape. Place shaped batter into preheated oven set to 450 degrees. Bake for about 20 mins. Prepare mushrooms in shallow pan with a few tablespoons of water while waiting. Heating mushrooms in a shallow pan of water helps soften and bring out the flavor of the mushrooms. Once the crust is cooked to a golden brown, top with pizza sauce, bruschetta, cooked mushrooms, prosciutto, parmesan cheese, and half the amount of mozzarella cheese. Place in oven and add the remainder cheese towards the end of cooking. Once finished and cheese is golden brown (mine got a little darker than golden), let cool and enjoy!
