Recipe of the Week- Spinach and Cauliflower


Healthy Creamy Spinach- Cauliflower Alfredo Sauce w/ Homemade Garlic Bread





Ingredients: 
8 large cloves garlic, minced
5-6 cups cauliflower florets
6-7 cups stock or water
1 teaspoon salt (more to taste)
½ teaspoon pepper (more to taste)
½ cup half and half (more to taste)
Handful of chopped cilantro (about 1/4 cup)
3 cups cup raw spinach leaves
1/2 cup fresh parmesean cheese
your choice of spice


Preparation:
Pour stock (I used chicken broth) into pot with cauliflower. Let cauliflower cook in stock until soft. Once cauliflower is soft, take out of pot using a vented spatula and transfer to blender. Add about 1-2 cups of stock from pot to the blender to make the blending of cauliflower smoother. Pour half of the blended cauliflower mixture back into pot. With the remaining sauce left in blender add cilantro and spinach (add spinach one cup at a time to make the blending process smoother. Once blending is finished and at desired texture, combine the sauces into one large pot. Add garlic, salt, pepper and any other preferred seasonings to taste. I also added a seafood blend of calamari, shrimp and scallions to my sauce and served it over lemon garlic linguine pasta from Trader Joes. 



Garlic Bread:
Your choice of bread
Lightly Drizzle olive oil onto bread
Add very finely minced garlic to each slice (no more than 1/4 teaspoon for me)
Sprinkle with fresh dill as garnish
Toast in oven or toaster oven until golden brown
