Recipe of the Week- Soup!

 Creamy Broccoli and Parmesan Potato Soup









I came home from work one day tired and feeling under the weather from a cold I caught. Soup was the only thing on my mind and I've been trying to make soups homemade rather than from the can because I just can't stand all the extra preservatives and ingredients that go into soups these days. And the canned stuff gives me heartburn. I only had a few ingredients to work with: potatoes, baby broccoli, broth, parmesan cheese and half and half. But with those few simple ingredients I was able to make a delicious soup that hit the spot! I went to bed feeling goood that night. Check out below for the ingredients and prep. 

Ingredients:
5 medium/large Potatoes
1 quart of broth of your choice (I used chicken broth from Trader Joe's)
1 1/2 cup half and half
3 cups baby broccoli
1/2 cup fresh parmesean
3 tablespoons fresh chopped cilantro
Salt and Pepper to taste

Preparation:
Rinse and boil potatoes in large pot for about 20-30 minutes until soft, I left the skin on because I like the extra fiber and nutrients that the skin has to offer. Plus it added a nice texture to the soup and fell off of the potato flesh really easily once the potatoes became soft and mashable. Once soft, mash potatoes until smooth adding broth and half and half slowly to help aid in smoothing out the soup texture. Once soup has reached desired consistency, add parmesan cheese, baby broccoli, chopped cilantro and salt and pepper. Season to taste, let sit to help flavors and texture settle, and then serve!
